Though we often extol the virtues of meat on the bone, we are equally appreciative of the tenderloin. Lamb tenderloin is lean and delicate and deserves careful treatment. Rub the lamb with oil and season simply with salt, pepper, garlic, and rosemary. A quick sear in a pan or on a grill for a few minutes on each side is all it needs. Slice into delicate medallions and then fan out the morsels of lamb on a platter with vegetables of your choice. There won't be any leftovers.
