D'Artagnan's confit and rillettes collection is rooted in the Gascon culinary tradition that inspired founder Ariane Daguin to launch the company in 1985, and these products remain among our most celebrated offerings. Duck leg confit is produced by slow-cooking Moulard duck legs in their own fat until deeply tender, fully cooked, and ready to crisp under the broiler for a quick dinner, shred into tacos and quesadillas, or fold into salads and pastas. Duck rillettes are made from slow-cooked Rohan duck leg confit, shredded and enriched with rendered duck fat to a silky, spreadable consistency, best served slightly below room temperature with cornichons and bread.
