- Confit & Rillettes
Confit is a cooked style of charcuterie, in which meat is slowly braised with aromatics until tender. We offer convenient duck and chicken leg confit that’s ready-to-heat; both are great on their own or in recipes. Rillettes are the next level: shredded confit that is creamed into a chunky meat spread that’s wonderful for charcuterie boards.
Charcuterie refers to smoked, cured or cooked meats, all of which are traditional methods of preservation. Confit is the cooked style of charcuterie, in which meat is slow cooked in fat along with aromatics. This confit technique breaks down and tenderizes the meat, be it duck or chicken. Both our duck and chicken leg confit are sold fully-cooked and ready-to-heat. These easy and convenient foods are great on their own and are adaptable to many recipes like our chicken confit pot pie. Tender and shreddable, confit can be made into rillettes, a chunky meat spread that is a must-have for any charcuterie board. We made duck confit into ready-to-serve duck rillettes, which can be used in cooking, as we did in our Duck Wontons with Spicy Hoisin Dipping Sauce recipe.
