D'Artagnan's Muscovy duck is raised cage-free on a vegetarian diet of corn and soy with no antibiotics or hormones, sourced from farms that follow the traditional French methods that have made this breed, known in France as the Barbarie or Barbary duck, a staple of European fine dining. The Muscovy carcass is heavier than other domestic breeds, with a larger breast carrying up to 40% less fat than Pekin, producing a deeply flavored, dark red meat that rewards roasting, pan-searing, and braising with bold, concentrated results.
