Langoustines are the rarer cousin of the lobster; larger than most shrimp, but thinner and smaller than lobster, and prized for their uniquely intense flavor with a lingering sweetness, and the tender, velvety texture of the tail meat. Known as Norway lobsters or Dublin Bay prawns, langoustines are a delicacy that is particularly popular in Europe, especially in Spain (where they are called cigalas) and France. Our Scottish langoustines are responsibly caught using pots or creels that are laid on the seabed, a technique that reduces both bycatch and damage to the sea floor. The clear Atlantic waters off the Isle of Barra - the most southerly of the Outer Hebrides on the west coast of Scotland – are famous for producing abundant langoustines. Hand-graded and packed, our langoustines are quick frozen at sea to preserve their freshness, without any artificial preservatives or chemicals. Each langoustine weighs 3 to 3.5 ounces and comes fully intact with shell and head for use in stocks and sauces. When cooked, the light orange shells do not brighten to red like lobsters do; instead, they become paler after cooking. Enjoy the tail meal with butter, lemon, garlic, over pasta, rice, or alone on a family-style platter.

Best Practice Thawing Instructions

Larger langoustines can be served much like lobster, split down the middle and basted, broiled, or grilled in butter. The smaller the langoustine, the sweeter and more tender. Langoustines can be grilled, sautéed, broiled, or poached whole. In smaller specimens, the tail meat is the edible part, and is best complemented with butter, garlic, and lemon.

Boil langoustines whole in salted water and serve on a platter family style with lemons and garlic aioli for dipping. Discarded shells can be saved and used to make briny seafood broth for soups. Cook in tomato sauce or curry.

Add langoustines to paella whole or serve on a bed of buttery pasta.
