Our sliced duck prosciutto is ready-to-eat charcuterie at its best. Moulard duck breasts are rubbed with salt, sugar, and spices – but never any nitrates or nitrites - then air-dried in small batches to ensure the best quality. Because we don’t use nitrates, this has to be described as an “uncured” product, though the duck breasts are aged in a natural process as old as time. With a balanced flavor and firm, yet silky texture, sliced duck prosciutto is a welcome addition to a charcuterie board or cheese plate.
