- 3 boneless rabbit loins
- Your favorite BBQ rub
- 3 tablespoons Dijon mustard, plus more for serving
- 1 tablespoon bourbon
- 1 teaspoon maple syrup or honey
- 1 pack applewood smoked bacon, cut into 3-inch lengths
Also needed: Toothpicks or small skewers, soaked in water for about an hour

RECIPE Preparation
- Prepare a charcoal grill for indirect cooking or set a gas grill to medium-high.
- Pat rabbit loins dry and trim away the thin belly portions, saving for stock or another use. Cut loins into 1-inch pieces. Season on all sides with BBQ rub.
- In a medium bowl, stir together Dijon, bourbon, and maple syrup. Add seasoned rabbit and turn to coat on all sides with the mustard mixture. Working with one piece at a time, wrap rabbit in a section of bacon and secure with a prepared toothpick.
- Grill, turning often, until bacon is crisp and rendered, and rabbit registers 150 degrees F on an instant-read thermometer. Remove to a platter and rest for 5 minutes before serving with mustard or your favorite BBQ sauce.
