Dry-cured duck prosciutto, made with magret from Moulard ducks raised humanely with no antibiotics or hormones. This ready-to-eat prosciutto is perfect when sliced for a charcuterie or cheese board. It can also be cubed and added to beans, pasta, and stew.
Serving Tips: Duck prosciutto makes an excellent addition to any charcuterie board or cheese plate. Using a sharp slicing knife, slice the prosciutto paper-thin, against the grain. If you cut at a 45 degree angle, you’ll more surface area. The slices are also delicious wrapped around summer produce like melon or stone-fruits. The end pieces and remnants can be cubed and added to the cooking liquid for dried beans or soup base.

Serving Tips: Our medallion of foie gras can be spread, piped, or, when chilled, sliced. Dip a knife into hot water before slicing for the cleanest cut. Serve with brioche, baguette, or sliced fruit like apple or pear; or add to a charcuterie board or cheese plate. Pipe softened medallion into vol-au-vents or choux puffs to make elegant canapés. Use a small piece to enrich a pan-sauce. Top a hot steak or even a burger with a generous hunk for a decadent treat. Unopened, medallion of foie gras keeps in the fridge for up to 3 weeks, making it an ideal item to have on hand for an indulgent snack or to serve when unexpected guests arrive.

To make this traditional charcuterie, slow-cooked duck leg confit is shredded and then mixed with duck fat. Enjoy spreadable duck rillettes simply on toast, with crunchy pickles on the side, in a sandwich, or serve as part of a charcuterie board.
Serving Tips: Rillettes should be brought to just below room temperature before serving. A quick fluff with a fork will distribute the fat evenly and make for easier spreading. Duck rillettes are an excellent addition to any charcuterie board, just make sure to serve them the traditional way with cornichons on the side. Rillettes are wonderful spread on toasted bread and make an excellent sandwich, taco, or even steamed bun or dumpling filling.

Serving Tips: Our ready-to-eat smoked duck breast is super versatile. Besides making an excellent addition to any charcuterie board or cheese plate, the thinly sliced smoked duck breast is wonderful in sandwiches, on salads, or simply eaten as a snack. Slice the breast very thinly against the grain. Slicing at an angle will yield pieces with more surface area. Smoked duck breast can also be cubed and added to pasta, soup, rice dishes, and vegetable sides.
