Rabbit meat is light, tender, lean and finely textured, with a sweet flavor profile. A staple of Italian and French kitchens, rabbit meat works well with many recipes, in any season. Rabbit has been described as the most environmentally friendly meat because it offers more protein and less fat than both beef and chicken while requiring fewer resources to bring it to market. Our rabbit comes from Italy where third-generation farmers remain dedicated to traditional methods, and expertly butcher the rabbits themselves. With a clean diet of sweet alfalfa grasses, oats, wheat, and barley, and no traces of antibiotics, hormones or other chemicals, this is rabbit meat of the highest quality and flavor.

We are proud to work with a small family farm in the Emilia-Romagna region of Italy that has been raising rabbits for three generations. They are committed to providing the best possible product in terms of quality, consistency and reliability - and their butchering is impeccable. Because rabbits reproduce rapidly, and naturally live in tight burrows, they can be raised humanely in smaller spaces. They also consume fewer resources than cattle or chickens, making them one of the most efficient animals to farm. The farm raises Californian White and New Zealand White breeds known for exceptional genetics, producing sweet and tender meat with this delicious crossbreed. The farm meets or exceeds the stringent EU standards for the 5 Freedoms of animal welfare. The rabbits are fed a clean diet of sweet alfalfa grasses, oats, wheat and barley. A consistent and regulated diet ensures unadulterated rabbit with no traces of antibiotics, hormones or other chemicals.
