Cooking Tips for Filet Mignon: Simply season with coarse salt and pepper or wrap with a strip of bacon before cooking. Filet mignon is best served rare to medium-rare (130-145 degrees F). Sear quickly over high, direct heat then lower, and continue to cook to the desired temperature. Top hot steak with black truffle butter, or make a quick pan-sauce with red wine and our veal demi-glace.

Cooking Tips for Lobster Tails:

Methods: Pan-Sear, Pan-Roast, Grill, Broil, Sous Vide

Lobster tails can be steamed, boiled, grilled, baked, or broiled. We like the simplicity of broiling them. To do so, take a sharp knife or kitchen shears, and carefully cut the top side of the lobster shell lengthwise, leaving it connected to the shell at the tail. Gently pull the shells slightly apart, lifting out the meat from the shell, then season the meat with melted butter, paprika, salt, and white pepper. Broil lobster tails until lightly browned and lobster meat is opaque, about 5 to 10 minutes. Serve with drawn butter for dipping the sweet meat.
