The strip steak is cut from the short loin primal, a part of the cow that gets little exercise, resulting in tender texture. At an average of 12 ounces, with consistent thickness, the NY strip steak is a great cut for searing in a hot skillet or on the grill. Serve medium-rare to medium to best enjoy its tender texture and rich flavor. Keep seasoning simple and let it rest before slicing into the steak.

Cooking Methods: Pan-Sear, Pan-Roast, Grill, Broil, Sous Vide

Preheat a cast iron skillet or grill over medium heat until hot, at least 5 minutes. Season the steak with whatever seasoning you like, but with this quality of beef, salt and pepper are all you need to let the flavor shine. We recommend cooking our Angus strip steaks to rare or medium rare, being careful not to overcrowd the pan or grill. Once cooked, rest your steaks for about 5 minutes, loosely tented with foil, before serving. This allows the juices to sink back in and redistribute throughout the meat, keeping it juicy and flavorful.

The Angus cattle are raised entirely on pasture, rotationally grazing on nutritious grasses and given a supplemental vegetarian diet enriched with vitamins E and A to strengthen their immune function and overall health.

The ranchers take every care to support both the health of the environment and cattle. They know exactly where each animal comes from and can track them from birth to processing, which happens at about 26-28 months of age. Each cow comes with an affidavit proving that the rancher followed the cooperative's strict protocols.
