Hanger steak is also known as the butcher’s steak because that’s who enjoyed most of it. But chefs and those in the know value it for its deep, beefy flavor. In French bistros, the popular hanger steak is called onglet. The V-shaped cut is long, flat, and comes from the belly, or plate, where it hangs just below the diaphragm, doing very little work. Think of the bold flavor of a ribeye and the lush texture of the tenderloin, and somewhere between them, you'll find the hanger. Trim away the central membrane and any excess fat; cook it hot and fast on the grill or in a pan, and slice thinly across the grain to enjoy the rich, natural flavors and complex marbling.

Trim the fat off, and use your favorite marinade; then sear it quickly in a hot pan until medium rare. Serve with pan juices and duck fat french fries, or cut into strips to top a salad, rice dish or fill fajitas or tacos.

The Angus cattle are raised entirely on pasture, rotationally grazing on nutritious grasses and given a supplemental vegetarian diet enriched with vitamins E and A to strengthen their immune function and overall health. 

The ranchers take every care to support both the health of the environment and cattle.  They know exactly where each animal comes from and can track them from birth to processing, which happens at about 26-28 months of age. Each cow comes with an affidavit proving that the rancher followed the cooperative's strict protocols.
