The filet mignon is a special occasion steak, famous for its tender, buttery texture and mild beef flavor. Filet mignon is French for “dainty cut,” and refers to the small, center-cut medallion of beef tenderloin. Cattle have only two of these relatively small muscles that run along both sides of the spine, which makes this popular cut even more precious. Cook filet mignon to rare or medium-rare to maintain its juiciness and texture, and serve with a rich sauce, like béarnaise, or a red wine and demi-glace reduction laced with truffle butter.

Cooking Tips: Simply season with coarse salt and pepper or wrap with a strip of Applewood Smoked Bacon before cooking. Filet mignon is best served rare to medium-rare (130-145 degrees F). Sear quickly over high, direct heat, then lower the heat and continue to cook to the desired temperature. Top hot steak with black truffle butter or make a quick pan sauce with red wine and our veal demi-glace.

The Angus cattle are raised entirely on pasture, rotationally grazing on nutritious grasses and given a supplemental vegetarian diet enriched with vitamins E and A to strengthen their immune function and overall health.

The ranchers take every care to support both the health of the environment and cattle. They know exactly where each animal comes from and can track them from birth to processing, which happens at about 26-28 months of age. Each cow comes with an affidavit proving that the rancher followed the cooperative's strict protocols.
