Our all-natural Angus beef brisket flat comes to you courtesy of a cooperative of ranchers that raise cattle the right way—entirely on pasture. The cut is from the breast of the cattle, and it gets a lot of exercise, which imparts flavor but creates tough texture. That’s why brisket is the ultimate slow-cooking cut, prized by pit masters, backyard smokers, and chefs alike. The flat is the lower part of the brisket; it is leaner, more uniform in shape, and can be easily cut into thin, perfect slices. Braise it or smoke it, then pile it high on sandwiches, tuck it into tacos, fry it with potato hash, or slather it in BBQ sauce for melt-in-the-mouth meals.

Whether it is cooked using a smoker, sous vide, braised, or salt-cured, this extra time allows the connective tissue to break down, creating a juicy texture that melts in your mouth. For inspiration, try our classic red wine–braised brisket or everyone’s favorite St. Patrick’s Day corned beef.

Our marbled and flavorful Angus beef comes from cattle raised exclusively for D’Artagnan by a cooperative of ranchers committed to strict protocols of humane animal husbandry.

The Angus cattle are raised entirely on pasture, rotationally grazing on nutritious grasses and given a supplemental vegetarian diet enriched with vitamins E and A to strengthen their immune function and overall health. 

The ranchers take every care to support both the health of the environment and cattle.  They know exactly where each animal comes from and can track them from birth to processing, which happens at about 26-28 months of age. Each cow comes with an affidavit proving that the rancher followed the cooperative's strict protocols.
