Green Circle™ chicken is available exclusively at D’Artagnan. The birds are free-range and regeneratively raised on small Amish and Mennonite farms that focus on the health and comfort of their flocks. Because they are fed vegetables—scraps, bruised, and otherwise unwanted—collected from farmers markets, Green Circle birds taste like old-fashioned chicken. These leg quarters give you rich dark meat of the thigh and drumstick that cook well together in a red wine braise or a curry sauce.

Cooking Tips: Green Circle chicken leg quarters are perfectly portioned for one and extremely versatile. They take all manner of seasoning, brining, and sauces. If slow-cooking using a moist-heat method, place the chicken leg quarters under a broiler to crisp the skin just before serving. Chicken is cooked when an instant-read thermometer inserted into the thickest part meat registers 165 degrees F and juices run clear.
Our signature bird proves the saying that “a happy chicken is a tasty chicken.” Green Circle™ chicken is regeneratively raised on managed pasture and is Certified Humane® by Humane Farm Animal Care. We developed this special program with Amish and Mennonite family farms to recreate the full flavor of old-fashioned chicken—the kind that foraged in pasture and farmyards and ate supplemental vegetable scraps from the garden and kitchen.
In that tradition, we turn food waste into healthy protein. Our chickens eat a diet that includes clean surplus vegetables from local farms and markets— bruised, cut, or otherwise unattractive vegetables—along with grains like corn and soy.
Green Circle chickens enjoy more than twice the barn space required to be considered free-range; they have year-round access to the outdoors and the ability to forage naturally and are raised to 52 days, as opposed to 42 days, which is standard for commercially raised chickens.
All Green Circle chickens are air-chilled and hand-processed in a low-volume facility near the farms where they are raised. Our farmers are true stewards of the Earth, as all waste and processing waste are composted and returned to the soil to improve its health and provide for future generations.
