Few peppers in the world have the status of piment d’Espellete. This renowned pepper is considered a vital seasoning by many chefs, including our own Ariane, and a staple in Southwest France. It has a gentle heat and a unique flavor profile with notes of sun-dried tomatoes, red bell pepper, and a subtle smokiness that makes it a versatile seasoning with a lot of personality. This is the only pepper to earn the coveted French Appellation d'Origine Contrôlée (AOP), meaning authentic piment d’Espelette can be cultivated, dried, processed, and ground solely within the designated Espelette region in Southwest France. Seeds brought home by Spanish and Basque explorers to the Americas in the 1600s established peppers which are an important part of the regional cuisine, enjoyed in piperade, poulet Basquaise, and txuleta (ribeye with piquillo peppers). The town of Espelette festoons its homes with strings of red peppers drying in the sun and celebrates its heirloom pepper with an annual festival. Use piment d’Espelette to add a layer of flavor to simple salt-and-pepper dishes, in fruit chutneys, as a bright red flourish on a seared duck breast, steak, or foie gras. Every well-stocked pantry needs a jar of piment d’Espelette with its warm and gentle heat.
