Using only the Iwashi sardine from the Sea of Japan - much larger and fattier than its Mediterranean counterpart - along with salt and sugar, this fish sauce is graceful, layered, and savory. To make it, Iwashi sardines are aged 2 years before going into Japanese whiskey barrels for an additional year to mellow the flavor and impart subtly sweet notes. Delicate, subtle, and refined, this fish sauce will become a favorite pantry staple that elevates any dish.
