Our signature bird proves the saying that “a happy chicken is a tasty chicken.” Heritage breed Green Circle chicken is regeneratively raised on small farms, Certified Humane® by Humane Farm Animal Care, and fed surplus vegetables along with wholesome grains. We developed this special program to recreate the full flavor of old-fashioned chicken—the kind that foraged in pasture and farmyards with supplemental vegetable scraps from the garden and kitchen. In that tradition, we turn food waste into healthy protein. The diet and the care taken on the farm—plus air chilling—give this chicken a unique, authentic flavor and a dense yet tender texture.

Cooking Tips: Boneless, skinless chicken breasts are the most versatile and popular cut for a reason. They can take all manner of seasoning, marinating, and brining. We like this cut for butterflying and stuffing, wrapping with bacon, and pounding flat for chicken schnitzel or grilled paillard.

We developed this special program with Amish and Mennonite family farms to recreate the full flavor of old-fashioned chicken—the kind that foraged in pasture and farmyards with supplemental vegetable scraps from the garden and kitchen.
In that tradition, we turn food waste into healthy protein. Our heritage-breed chickens eat a diet that includes clean surplus vegetables from local farms and markets— bruised, cut, or otherwise unattractive vegetables—along with grains like corn and soy.
Green Circle chickens enjoy more than twice the barn space required to be considered free-range; they have access to the outdoors and the ability to forage naturally, and are raised to 85 days of age, as opposed to 42 days, which is standard for commercially raised chickens.
Our farmers are true stewards of the Earth, as all waste and processing waste are composted and returned to the soil to improve its health and provide for future generations. They air-chill and hand-process the birds in a low-volume facility near the farms where they are raised.
