From our milk-fed porcelet raised on a small farm in Quebec, these hind shanks are perfect for slow cooking to fall-apart tenderness. Because they are skin-on, you can score and roast to a crackling finish, as in the classic German dish schweinshaxe, or braise the shanks low and slow and serve with the resulting collagen-enriched sauce.

The famous German dish schweinshaxe - with meltingly tender meat and crispy skin - is made with pork shank, pork knuckle, or pork hock.

It's easy enough to make, and much of the cooking time is hands-off. Braise the shanks in stock and water for a few hours, cool, and then score the skin. Roast for 90 minutes or so, and then blast at high temperature to crisp up the skin at the end. Reduce the braising liquid to make a sauce, and you'll have a very special dinner.

Years ago, D'Artagnan partnered with a family farm in Quebec to introduce their unique milk-fed pork to the U.S. Inspired by the European tradition of cochon de lait, they established a very specialized operation, unique in North America, to raise Yorkshire breed piglets in spacious barns and nourished with a unique feeding program.

After being weaned, the piglets get this proprietary milk formula warmed to the temperature of mother’s milk every two hours, 12 times a day. This matches the natural nursing rhythm and makes for a seamless and stress-free transition. The diet allows them to thrive and grow larger than conventional suckling pigs while maintaining the tenderness and flavor associated with much younger pigs. No antibiotics, growth promotants, or anything artificial are added to the feed.
