Guinea Hen

Guinea hen, or guinea fowl, is a beginner’s game bird with an approachable flavor that’s easy to enjoy. With a taste almost like pheasant, but with darker and more mildly flavored meat that stands up nicely to strong herbs and spices, guinea hen is popular for roasting throughout Europe. Cook it like chicken: breaded and fried; braised with herbs and root vegetables; or roasted with butter, bacon, or duck fat to protect the lean meat. Our small-scale poultry farm raises guinea hens humanely, without antibiotics or hormones, using traditional methods to bring the very best birds to market.
