Scallops with ’Nduja Butter

  • 1/4 cup (50 grams) ’nduja at room temperature
  • 1 clove garlic, finely grated
  • Zest of 1 lemon, plus 2 tablespoons lemon juice
  • 2 tablespoons finely chopped parsley
  • Kosher salt and freshly ground black pepper
  • Neutral oil
  • 1 lb. Lobster Gram Jumbo Sea Scallops, thawed
  • Microgreens, for serving, optional

The addition of ’nduja—a soft, spreadable salami from Calbria—gives this delectable dish a spicy zing that complements the velvety texture and sweet flavor of scallops.
RECIPE Preparation
  1. Make the ’nduja butter: In a small bowl, stir together butter, ’nduja, garlic, lemon zest, lemon juice, and parsley. Taste for seasoning and add salt or pepper, if desired. Set aside until ready to use.
  2. Thoroughly pat dry scallops on all sides with paper towels. Season each scallop with salt and pepper just before placing on the cooking surface.
  3. To cook the scallops on an outdoor griddle: Heat your griddle on medium-high until lightly smoking. Ideal surface temperature should be between 500-600 degrees F. Add neutral oil.
  4. To cook the scallops on the stove: Heat about 2 tablespoons of neutral oil in a heavy skillet over high heat until slightly smoking.
  5. Add scallops, leaving space between each one to prevent excess steaming. Cook scallops without moving them until well browned on first side, about 1 minute. Carefully flip scallops and cook until second side is well-browned, about 1 minute more. Transfer to a paper towel–lined plate to drain.
  6. Serve scallops immediately over microgreens, if using, and spoon generously with ’nduja butter sauce.

Notes: ’Nduja can be softened in the microwave for about 10-15 seconds, if needed. Keep leftover ’nduja butter refrigerated and enjoy with chicken, steak, or vegetables.
