The rare Nebrodini is in the oyster mushroom family, like the King Trumpet, and is native to the limestone hills of Northern Sicily, where it is known as a "grilling oyster." Our organic mushroom farm is the only one to cultivate Nebrodini in the U.S. in pristine and optimal conditions. This large, ivory-colored mushroom has a texture and flavor reminiscent of abalone—dense, meaty, and almost sweet. Each mushroom ranges from 3 to 4 inches tall and can weigh up to 2 ½ ounces. Both the pure white stems and caps are tasty, so there is no waste with this mushroom. They have a delicate texture, even though they are sturdy enough to be halved and grilled. Cut into thick slabs to showcase their robustness or slice thin to highlight its nuanced flavor. Nebrodini shines as the hero on the plate or as an elegant complement.

Cooking Tips: Nebrodini mushrooms can be cut and used just as you'd use button mushrooms: sliced 1/2" thick, lightly brushed with oil and grilled, or pan-seared and basted with butter. The flavor is sweet and rich. The texture is unlike any cultivated mushroom you've tasted before. Nebrodini is very versatile - at home, both in green curry with coconut or with tomato, olive, and capers. Try it halved or slab cut, brush with olive oil and grill, then finish with lemon, garlic and thyme.

Our cultivated exotic mushrooms come from pristine, controlled conditions and seldom need cleaning. If they do require minimal cleaning, use a light hand. Do not rinse mushrooms in water, as this can destroy their texture; they absorb moisture. Instead, use a dry brush, cloth, or lightly moistened paper towel to remove any unwanted particles. Simply trim the bottoms, and they are ready for use in your favorite recipes.

Store mushrooms in the refrigerator in their original packaging. Once opened, they are best stored in a paper bag, which absorbs moisture, rather than sealed in a plastic storage container.
