This aromatic and smooth vinegar is crafted from wine and the concentrated must of the Pedro Ximénez grape, a white Spanish grape that is sun-dried to concentrate its sweet flavor. The intensely sweet dessert sherry is then fermented, clarified, blended with grape must, then aged in American oak casks for 12 months. The concentrated sweetness results in a sweet-sour balanced vinegar with hints of raisin and a deep brown color. Drizzle on ice cream or use in any recipe that calls for balsamic vinegar.
