Beloved for their tender texture, pleasantly briny liquor, and subtle natural sweetness, littleneck clams are also easy to prepare at home. Their small size makes littlenecks especially versatile: steam them with white wine, garlic, and herbs, toss them into linguine, or add them to chowders, cioppino, and brothy seafood stews. Plan a clambake or add them to a casual seafood boil or a lobster bake. They cook quickly and open beautifully, revealing juicy, tender meat with every shell. Each pound serves two to three as an appetizer and contains 8-12 clams.

Sold live for exceptional freshness. Store refrigerated in a breathable container—not sealed in water or an airtight bag—and cook promptly. Before cooking, discard any clams with cracked shells or any that remain open after a gentle tap.
Clean the shells. Place the clams in a colander and rinse under cold running water. Scrub each shell with a stiff brush, especially around the hinge, to remove sand, mud, seaweed, or barnacles. Rinse again and transfer the cleaned clams to a clean bowl.
Purge sand, if needed. Mix cold water with non-iodized sea salt or kosher salt to approximate seawater—about 2 tablespoons of salt per 4 cups of water, or roughly 30–35 grams per liter. Soak the clams for 20–30 minutes. For very sandy clams, change the water and repeat once.
Steam just until the shells open, then bring them to the table with plenty of crusty bread for the savory broth.
Fresh clams typically come with some sand inside them, but we can help you with that. Save the cooking broth and pour it into a bowl, simply dip the clams in the broth to help remove any sand that may be inside. Go ahead and discard any clams that don’t open up. If you’re looking for a special treat, you can serve the clams with melted butter!
Steam Method:
- Put ½" of water in a large sauce pan and bring it to a boil.
- Add the clams, cover with a lid, and cook for approximately 4 minutes.
- After the shells open, let them cook another minute. Discard any clams that don’t open up.
- Boiling Method:
- Drop clams inside their mesh bag in boiling water with lobster if there’s room.
- Watch for outer clams to open within a minute or two.
- Once they do, cook for one minute longer.
- Remove the bag with a long-handled fork or tongs.
- Cut open and carefully pour into a strainer.
