Carve your own striploin steaks from this primal cut from the short loin of the cattle. Or trim the ends off (save for another night) to create a generous roast. This is the same cut that restaurant chefs purchase for their busy daily steak needs—primarily for the popular NY strip steak. Trim and clean it a little before breaking it down into steaks as thick as you like. Or use the center for a big, juicy roast, and stash the rest for steak night. Striploin is appreciated for its perfect balance of flavor and tenderness, with a nice fat cap that renders as the beef cooks, and just the right amount of marbling.

The Angus cattle are raised entirely on pasture, rotationally grazing on nutritious grasses and given a supplemental vegetarian diet enriched with vitamins E and A to strengthen their immune function and overall health.
The ranchers take every care to support both the health of the environment and cattle. They know exactly where each animal comes from and can track them from birth to processing, which happens at about 26-28 months of age. Each cow comes with an affidavit proving that the rancher followed the cooperative's strict protocols.
