Duck Confit & Rillettes

Charcuterie refers to smoked, cured or cooked meats, all of which are traditional methods of preservation. In the cooked style of charcuterie is Duck Leg Confit; simmered in duck fat for hours along with with aromatics. This breaks down the duck meat and makes it tender. Once it is shreddable, we make Duck Rillettes, a chunky duck spread that is a must-have for any charcuterie board. You can also use Duck Rillettes in cooking, as we did in our Duck Wontons with Spicy Hoisin Dipping Sauce recipe.
