From the pork belly and other less-appreciated cuts come the tastiest and best loved foods: bacon and sausage. D'Artagnan bacon is made from heritage-breed pork and Moulard duck breast (yes, duck bacon exists). Smoked over wood, our natural, uncured bacon is simply the best. An unsmoked pancetta-style bacon is great for cooking (try our Bacon and Onion Tarte recipe), and our sausage line offers spicy andouille and chorizo sausage as well as garlicky pork sausage that we love in cassoulet. Dry-cured pork sausage is called saucisson sec, and we recommend it sliced and served on a charcuterie plate.
