    It doesn’t have to be made of pork to be called bacon. Our duck bacon is a twist on the traditional that offers you great flavor and less fat than pork bacon.

    This is the house that duck built, so it only makes sense that we offer duck bacon.

    We start with the sturdy Moulard duck breast, known as magret.

    The process is simple: the entire duck breast is rubbed with salt and sugar, smoked over real wood chips—no artificial liquid smoke or flavors are used—and then thinly sliced.

    The shingles may be a little smaller than traditional bacon, but they are thick and meaty with a rich, smoky flavor.

    According to USDA law, our natural bacon has to be labeled “uncured” because it has no added nitrates or nitrites.

    But we think you will agree that it’s just better that way.

    D’Artagnan is dedicated to finding farmers that share our vision of a more humane and sustainable way of rearing livestock. We look at scale and sustainability; working only with those farms that respect nature and focus on the best animal welfare practices.

    At our New York State farm the large Moulard duck, a cross between Muscovy and Pekin breeds, is the duck of choice. It’s worth noting that the Moulard breed is the favorite duck of Southwest France, where duck is a way of life.

    Our Moulard ducks are raised cage-free and humanely. They live in open barns, on a bedding of wood shavings with plenty of space and sunlight, an environment which allows natural flocking behavior. The ducks eat a vegetarian diet of corn, soy and fresh, clean water. Antibiotics and hormones are strictly forbidden.

    The duck farm does their own hand processing in a USDA-inspected plant, and uses air-chilling for the best flavor and least amount of water retention.

    Duck bacon is ideal for pork-free diets and is a fun substitute even for traditional pork bacon lovers. Serve it for breakfast or use it to enhance all kinds of dishes, including salads, pizza and pasta. Or make a DBLT—duck bacon, lettuce and tomato sandwich--for a change of pace. Whether you wrap it around scallops, toss into carbonara or use to enrich a braise, you’ll find plenty of uses for this savory duck bacon.

    Our Bacon

    D’Artagnan duck bacon is made from the duck that started it all: the Moulard. Since our founding, we have defined quality in duck products, and this bacon is a part of that tradition. To produce this natural product, we begin with breasts of humanely-raised ducks, and follow simple methods to make a smoky and delicious bacon unlike any other.
