    GENERAL DELIVERY: All orders ship via FedEx Overnight. You choose your delivery date - up to 30 days in advance. Orders placed before Noon ET, Monday-Thursday can be delivered the next business day. For Thanksgiving delivery, orders must be placed before Noon EST, Monday, November 20th.

    THANKSGIVING PRE-ORDERS:: Orders containing a "pre-order" Turkey, Turkey Breast, Goose or Capon must be delivered on November 17th, 18th or 21st.

    The white buna-shimeji mushroom (Hypsizygus tessellatus) is a variation of the hon-shimeji. A paler relative, this mushroom is sometimes called Alba Clamshell™. With a delicate appearance and thin stems about 2 to 3 inches long, the beech mushroom is pure white. It grows in small clusters, and the mushrooms should be separated for cooking.

    Chefs love these little mushrooms because of the flavor and crunchy texture. Both caps and stems are edible, so they can be tossed whole into a sauté pan with vegetables.

    The beech mushroom has an almond aroma and a delicate flavor that lends itself to various preparations. It pairs well with chicken, quail and rabbit, and plays nicely with olive oil, duck fat, butter, garlic, red pepper and citrus.

    For exotic mushrooms that can be cultivated, we work with a certified-organic mushroom farm in Michigan. They produce clean, fresh and flavorful mushrooms that are grown in optimum conditions on a natural substrate of corn husks and oak chips to provide pristine fungi. They are meticulous in their process, continually monitoring and improving the growing conditions to improve characteristics such as size, flavor and presentation.

     

    Our cultivated exotic mushrooms come from pristine, controlled conditions and seldom need cleaning. If they do require minimum cleaning, use a light hand.

    Do not rinse mushrooms in water as this can destroy their texture; they absorb moisture, which is undesirable in this situation. Instead, use a brush, cloth or paper towel to remove any unwanted particles.

    Store mushrooms in the refrigerator in their original packaging. Once opened, they do best in a paper bag, which absorbs moisture, then sealed in a plastic storage container.

    Don’t eat buna-shimeji raw, as they are quite bitter that way and their nutritional value is only available when cooked.

    Trim the conjoined ends of the mushroom clusters, removing any roots or residue from the cultivation beds. Save the trimmings to enhance a stock.
