The white buna-shimeji mushroom is a paler variation of the hon-shimeji. With a delicate appearance and thin stems about 2 to 3 inches long, the beech mushroom is pure white, with an almond aroma and delicate flavor that lends itself to various preparations. It grows in small clusters, and the mushrooms should be separated for cooking. Chefs love these little mushrooms because of the flavor and crunchy texture. Both caps and stems are edible, so they can be tossed whole into a sauté pan with vegetables. White beech mushrooms pair well with chicken, quail, and rabbit, and plays nicely with olive oil, duck fat, butter, garlic, red pepper, and citrus.

Cooking Tips: White beech mushrooms can be used in place of button mushrooms and make an elegant addition to roast meats, poultry, and seafood dishes, bisques, sauces, and stir-fries.

Our cultivated exotic mushrooms come from pristine, controlled conditions and seldom need cleaning. If they do require minimal cleaning, use a light hand. Do not rinse mushrooms in water, as this can destroy their texture; they absorb moisture. Instead, use a dry brush, cloth, or lightly moistened paper towel to remove any unwanted particles. Simply trim the bottoms, and they are ready for use in your favorite recipes.

Store mushrooms in the refrigerator in their original packaging. Once opened, they are best stored in a paper bag, which absorbs moisture, rather than sealed in a plastic storage container.
