    Maitake is the Japanese name for Grifola frondosa, which is known in English as the Hen of the Woods, Ram’s or Sheep’s Head or Dancing Mushroom. We use the names “maitake” and “hen of the woods” interchangeably.

    A coveted prize of mushroom foragers around the world, the maitake grows in a distinctive cluster of leaf-like, flattened caps that look a bit like the feathers of a hen. With firm, crunchy texture and fruity, earthy flavor, the hen of the woods mushroom is a favorite with chefs.

    Cut away the connecting stem at the base and cook this mushroom simply – some butter or duck fat in a sauté pan is all you need. Sprinkle salt and pepper to taste after cooking for sublime umami flavor. Maitake pairs well with roasted meats, chicken, cheese, greens and grains, and they can be roasted, grilled, sautéed, and added to your favorite mushroom recipes.

    There is evidence that maitake mushrooms have immune boosting properties, and they are used in traditional Chinese medicine. Not only delicious, but healthy too!

    For exotic mushrooms that can be cultivated, we work with a certified-organic mushroom farm in Michigan. They produce clean, fresh and flavorful mushrooms that are grown in optimum conditions on a natural substrate of corn husks and oak chips to provide pristine fungi. They are meticulous in their process, continually monitoring and improving the growing conditions to improve characteristics such as size, flavor and presentation.

     

    Do not rinse mushrooms in water – this can destroy their texture; they absorb moisture like a sponge. Instead, use a brush, cloth or paper towel to remove any unwanted particles. Store mushrooms in the refrigerator in a paper bag; plastic encourages deterioration in quality and texture.

    Trim the conjoined ends of the mushroom clusters, removing any residue from the cultivation beds before cooking.
