The Rohan duckling is a D'Artagnan exclusive: a proprietary heritage crossbreed developed by D'Artagnan and raised only on a single farm in New York State to our exacting standards. Incorporating Heritage Mallard and Pekin breeds, the Rohan was developed to capture the balanced, nuanced flavor of heritage-breed French ducks unavailable in the American market. The result is cage-free, air-chilled duck with juicy, rose-colored meat, a mild and approachable flavor, and no antibiotics or hormones ever used. Available in whole ducklings and duck breast, with cooking tips included to help achieve the perfect scored fat cap and medium-rare finish.
