Our wild turkeys are the real deal, descended from the same breed that has long roamed the American woodlands. Raised in upstate New York in nearly wild conditions, these turkeys forage on native grasses, insects, seeds, and grains, supplemented by alfalfa, hay, and barley. Since wild turkeys rarely grow over 10 pounds they are ideal for smaller gatherings. These unimproved, wild breed turkeys offer less breast meat than their domesticated cousins, but make up for it with lean, dark, flavorful meat that is ideal for game aficionados. This is not your ordinary bird!

Note: Because our wild birds are hand-processed, you may find small pinfeathers in the flesh. They are easy to remove with needle-nose pliers, tweezers, or your fingers.

Dark meat lovers will rejoice at the rich, lean, and intensely flavored wild turkey meat. As with any game meat, wild turkey requires a little more attention when roasting. Lean meats tend to dry out if over-cooked, which is why traditional recipes for these birds often involve barding and basting.

Since wild turkeys rarely grow over 10 pounds, they are ideal for smaller gatherings. Wild turkey is a perfect match for side dishes with assertive, seasonal flavors and your favorite medium to full-bodied red wine.

We recommend that you estimate1.5 pounds per person to determine the size of wild turkey you will need. 

Cooking Your D'Artagnan Turkey

Keep in mind that depending on several factors, including the size of the bird, oven calibration, type of cookware used, recipe variations, and method of cooking, time and temperature will vary. We recommend use of a meat thermometer, instant-read or digital, when gauging doneness.

It may seem a contradiction to say that wild turkey is farm-raised; while there may be a fence at the furthest perimeter, the turkeys live with very little human interaction, roaming wild and growing at a natural pace.
