Renowned for sport fishing, this tough “gladiator of the sea” can weigh as much as 700 lbs. and take several hours to reel in. Swordfish have large migratory patterns and do not school, making them one of the most sustainable fish species. Swordfish meat is moist and flavorful with a slightly sweet taste, and steaks have moderately high oil content and a firm, meaty texture.
