Cooking Tips: Cut from the knuckle, our wild boar mini roast comes in a roasting net to hold its shape. You can roast as-is, or remove the netting, season all-over and tie with butcher’s string. Removing the net allows you to pan-sear to get a nice brown crust before finishing in the oven or braising. You can also cut the roast into smaller chunks before cooking, if desired. Because it’s so lean, a quick brine, barding with bacon, or frequent basting will help to keep the roast moist. If using the net, don’t forget to cut it off and discard before serving.
