Muscovy duck, also known as Barbary duck, is prized for its deep red, lean meat and mildly gamey flavor.

Things we like about Muscovy duck: it is thin-skinned, with up to 40% less fat than its Pekin counterpart. So while cooking, it will render less fat; a good thing to keep in mind while preparing it.

Also in its favor, Muscovy duck has a higher meat-to-bone ratio and a larger breast than a Pekin duck of the same weight. This means that you are getting more meat for your money.

The flavorful and tender meat of the Muscovy duck is delicious when basted with our earthy truffle butter and served with mixed organic mushrooms. It is also an ideal match for tart, fruit-based sauces, or a glaze of lavender honey or plum sauce.

The Muscovy (also known as Barbary) duck comes from the warmer climes of South America. This makes it perfectly suited to the Mediterranean climate in sunny Central California, where our duck farm is located.

For over three decades, the farm has followed the French humane breeding and husbandry traditions; ducks live in open, spacious barns that permit natural behavior.

The ducks never receive any growth hormones, steroids or antibiotics, and are allowed to reach full maturity. This is a crucial difference between our methods and those of the average farm.

Our duck farm allows nature to take its course, and grows the ducks out to 85 days on average, twice as long as industry standard. A more mature duck is a tastier duck. That, along with a balanced diet of corn, soy, wheat and alfalfa, contributes to the best possible flavor and yield.

Tucked into a valley in central California is a family farm with over 35 years experience in raising ducks humanely. They use traditional methods and allow their Muscovy ducks to grow to full maturity in open barns, without the assistance of any hormones or antibiotics.
