It is made with exquisite pork from the heritage hog native to Hungary, distinctive for its thick coat of curly hair and abundant intramuscular fat, and popularly called “the Kobe beef of pork.” With its dark meat and abundant marbling, Mangalica is ideal for the extended curing time that creates the best Spanish hams. Fourth-generation maestro jamoneros - literally “ masters of ham”– cure Mangalica hind legs for an astounding 3 years in the fresh, clean air of the Rasillo de Cameros Mountains. The result of their artistry is this intensely flavorful ham, streaked with creamy fat that melts on the tongue. Serving Tips: Saucisson sec is the perfect addition to a charcuterie board or cheese plate. Slice very thin at an angle and serve with grainy mustard on the side. You can also use saucisson sec in any recipe that calls for salami. Cut the sausage into thin batons and add to a salad, slice thinly for pizza and grilled flatbread, or make a simple tartine of saucisson sec with black truffle butter on a baguette.

Creamy, rustic duck spread made from Rohan duck legs, raised without antibiotics or hormones. To make this traditional charcuterie, slow-cooked duck leg confit is shredded and then mixed with duck fat. Enjoy spreadable duck rillettes simply on toast, with crunchy pickles on the side, in a sandwich, or serve as part of a charcuterie board.
Serving Tips: Rillettes should be brought to just below room temperature before serving. A quick fluff with a fork will distribute the fat evenly and make for easier spreading. Duck rillettes are an excellent addition to any charcuterie board, just make sure to serve them the traditional way with cornichons on the side. Rillettes are wonderful spread on toasted bread and make an excellent sandwich, taco, or even steamed bun or dumpling filling.
Dry-cured duck prosciutto, made with magret from Moulard ducks raised humanely with no antibiotics or hormones. This ready-to-eat prosciutto is perfect when sliced for a charcuterie or cheese board. It can also be cubed and added to beans, pasta, and stew.
Serving Tips: Duck prosciutto makes an excellent addition to any charcuterie board or cheese plate. Using a sharp slicing knife, slice the prosciutto paper-thin, against the grain. If you cut at a 45 degree angle, you’ll more surface area. The slices are also delicious wrapped around summer produce like melon or stone-fruits. The end pieces and remnants can be cubed and added to the cooking liquid for dried beans or soup base.
