The leg tends to be the toughest cut of any animal, which is why we braise. It's the default technique for tenderizing, and it's hard to get wrong.

You just need heat and moisture. Perhaps some herbs and onions. Wine for the recipe, and some for drinking (that goes without saying). With rabbit, the mind turns to crème fraîche...Dijon mustard…white wine...garlic.

What you can do with chicken, you can do with rabbit. It helps to marinate the legs first to add flavor and begin the tenderizing. And if you want a more hands-on style of cooking, take it to the next level: buttermilk fried rabbit legs. Serve with coleslaw, green beans and cornbread on the side.

Our mission is to find farmers that share our vision of a more humane and sustainable way of rearing livestock. We respect our place in the food chain, and see farmers as true stewards of the land and environment. This is why we build real relationships with our farmers, and work only with those who respect nature and focus on the best animal welfare practices.

On traditional farms it was the younger family members who raised the rabbits, learning important skills needed for adulthood. This is continuing today with a revival of rabbit rearing, even in urban settings where it is possible to raise them in hutches on rooftops or in small backyards.

Rabbits are environmentally-friendly, easy to raise, and produce tender white meat that is considered the most nutritious protein by the USDA.

We work with a cooperative of small family farms in the Midwest; each farm signs an agreement to raise and process the rabbits humanely, and never administer antibiotics or hormones. The Californian White and New Zealand White breed rabbits are fed a vegetarian diet of sweet alfalfa, oats, wheat and barley.
