Pink snapper is found abundantly throughout the tropical Pacific and was once the most popular fish served in Hawaii, where it is known as opakapaka.  To ensure sustainability, pink snapper catches are heavily regulated; every fish is wild-caught by rod and reel, and those that are kept must meet sizing requirements. Snapper is a mild, firm fish with clear, light-pink flesh and a delicate flavor that can be prepared and enjoyed as sashimi or grilled, baked, roasted, and sautéed.
