Perhaps you associate osso buco with mild veal, but it actually refers to the cut, a cross section of shank with the bone left in it. Only a sharp saw in a skilled hand can carve beautiful pieces like this.
Here we refer to lamb osso buco in all its full-flavored glory. Rich, dark-red meat with great texture and taste will melt off the bone when you braise these gorgeous little nuggets. And the divot of tender marrow will melt on the tongue.
Use fragrant herbs, stock, demi-glace, mirepoix, garlic, tomatoes and red wine in the pot. Heaven.
The 2-inch cuts of lamb osso buco make perfect single servings. A bed of creamy polenta, garlic potatoes or whipped cauliflower pureé will do nicely for accompaniment. You might want some gremolata as a nod to tradition.

Brought to high-altitude pastures to graze on pristine grasses, the Rambouillet/Suffolk breed lambs are raised with natural and sustainable methods, and never given antibiotics or hormones. They are finished with a minimal supplemental grain feed which contains no animal by-products.
The lambs are raised to the age of six to nine months, instead of the more common one year of age, resulting in a tender texture and superb flavor.
