Our versatile heritage boneless pork chops can be prepared oven roasted, on the grill, in the smoker, slow cooker or sous vide.

One suggestion we can recommend is using the grill with a coffee rub and your favorite fruit BBQ sauce. Begin by preparing the coffee rub mixture in a small bowl, combining finely ground coffee, brown sugar, paprika, garlic powder, salt, and black pepper to taste. Pat the pork chops dry and generously rub the coffee mixture onto both sides, allowing the flavors to infuse the meat. Let the seasoned chops sit for 15-20 minutes to marinate.

Next, preheat your grill. Heat it to medium-high heat. Place the coffee-rubbed pork chops directly on the preheated grill grates. Cook the pork chops for about 4-6 minutes on each side until they reach an internal temperature of 140F for a cooked medium doneness.

During the last few minutes of cooking, generously brush the pork chops with your favorite fruit BBQ sauce on both sides, allowing the sauce to caramelize and create a glaze. Save some sauce for serving.

Once cooked, remove the pork chops from the heat and let them rest for a few minutes. This resting time allows the juices to redistribute, resulting in tender and juicy pork chops. Serve the coffee-rubbed heritage pork chops with a drizzle of additional fruit BBQ sauce for added flavor. Consider pairing them with roasted sweet potatoes, grilled vegetables, or a refreshing summer salad to complete the meal.

With this straightforward preparation using a coffee rub and fruit BBQ sauce, you'll transform your boneless heritage pork chops into a dish that combines smoky, savory, and sweet flavors. Enjoy the delectable results of this flavor-packed combination!

Our mission is to find farmers that share our vision of a more humane and sustainable way of rearing livestock. A cooperative of small family farmers dedicated to traditional methods raising old-breed hogs with completely traceable breeding lines.

The majority of the farms are sustainable “circle farms” that raise and grind their own feed for the pigs, which is a 100% vegetarian grain feed consisting of corn, soybeans and rolled oats. Families of pigs are left together and their indoor spaces offer at least 15 square feet of space per animal, and sows are never put in gestation crates.

The cooperative is strict about banning the use of antibiotics and hormones on each farm and limiting the number of hogs the farms raise.
