The wild Hedgehog mushroom (Hydnum repandum) has a yellow cap and looks a lot like its cousin the Chanterelle. But when you check the gills under the cap you’ll know why it is called the sweet tooth mushroom. Rather than the long, parallel gills of the Chanterelle, you will find soft, tooth-like gills that look bristly, like a hedgehog.

With a mild and slightly nutty, butterscotch flavor and a firm texture, the hedgehog mushroom is a favorite among our chef clients.

Quite versatile, it makes a good partner for meat and fish dishes; it’s also wonderful in sauces and soups. Often pickled, there are many ways to enjoy hedgehog mushrooms. Try sautéing in butter to experience the pure flavor of this mushroom.

In our quest to supply the best mushrooms to the most demanding and discerning chefs, we work with expert foragers around the world who collect mushrooms that are immediately sorted, packed and then flown to our warehouse each day.

Do not rinse mushrooms in water – this can destroy their texture; they absorb moisture like a sponge. Instead, use a brush, cloth or paper towel to remove any unwanted particles. Store mushrooms in the refrigerator in a paper bag; plastic encourages deterioration in quality and texture.

Brush the surface, check the toothed area under the caps for uninvited guests, and trim off the ends. Some light brushing with a tiny bit of water will clean debris from the cap. Try not to wet the underside, and blot dry on paper towels.
