Inspired by flavors from Basque country in Southwest France, our duck liver mousse is made here in the United States according to our exclusive recipe.
This mousse is luscious and velvety and it makes an elegant addition to any charcuterie plate. We like it as a pre-dinner snack, spread on crackers or crusty peasant bread. Sometimes we skip dinner altogether and finish the mousse.
Port is a wonderful pairing with this mousse, but we also love to it with full-bodied whites from Burgundy.
Our mousse keeps in the refrigerator for up to a month, so it is an excellent hors d’oeuvre standby for the gourmand host.
Cooking & Serving
Serve it in with a selection of our other handcrafted charcuterie—such as our saucisson sec, jambon de Bayonne or smoked duck breast and paired with sliced baguette, crisp-tart apples and an assortment of cheeses to round things out. Voilà—instant hors d’oeuvre.
