Heritage breeds like our Berkshire hogs - also known as Kurobuta - are being recognized anew for their unique qualities. The pork from these old world pigs is revered by chefs for its extraordinary marbling and distinctive, rich taste. And now it can be your go-to pork.

Our Milanese pork chops come from the end of a rib rack and are ideal for quick weeknight cooking, or to grill outdoors for a weekend dinner. These chops are evenly sized, nicely marbled with fat, and unfrenched, so there's more meat on the bone.

Berkshire pork is so tasty it doesn’t need much embellishment, and these pork chops will sear up tender, juicy and full of clean pork flavor. However, Milanese is also a style of cooking, in which veal or pork is pounded thin and breaded. Our chef clients often pound these chops around the bone, leaving it attached for presentation on the plate. It's a tempting option.
