Today, the Societa Agricola Acetomodena continues the ancient traditions of Modena, famed for producing balsamic vinegar. The Vecchi family has been making vinegar for several generations – some of the barrels in their acetaia are over 150 years old. Their high-quality balsamic vinegars are crafted from grapes grown in family vineyards. This rich balsamic vinegar is the grandfather of all balsamic and the pinnacle of the style. To get EU and DOP certification, the vinegar must be slowly fermented and long aged in wooden barrels – for 25 years in this case. The pinnacle of the style, this balsamic is thick and glossy, dense, mature, intensely flavored, and fragrant. The dark elixir can be enjoyed with red meats, tartare, risotto, desserts, dark chocolate, cheese, and charcuterie boards, over fruits, ice cream, and even as an accent to cocktails.
