Our signature Pheasant Terrine Herbette is made using a classic recipe that combines pheasant, all-natural pork, fennel and pastis and is topped with a sprinkling of fresh herbs. Called a terrine after the vessel in which it is cooked, you will find it to be a fine-textured pâté with lots of flavor.
Slice and serve this savory terrine with crackers or sliced baguette, pack it in a basket for a rustic picnic, or add it to a charcuterie plate. We also like it lightly grilled! Drink an earthy red wine like Bordeaux, Cabernet Sauvignon, Syrah or Pinot Noir with this hearty terrine. If you are partial to craft beer, try pairing a pale or strong golden ale.
Like all of our mousses and pâtés, our pheasant terrine keeps for up to 21 days in the refrigerator and makes a perfect and quick hors d’oeuvres for unexpected company.
