Our premier-quality domestic beef comes from Angus and Angus Cross stock, and is raised exclusively for D’Artagnan in the Northwestern United States by a cooperative of ranchers committed to humane animal husbandry. The cattle are raised on open pastures where they graze freely on grass and then finished on a 100% natural, vegetarian diet of barley, corn and hay to produce a consistently marbled and flavorful meat. In keeping with the standards of the co-operative, the cattle are completely free of hormones, steroids and antibiotics resulting in a clean, healthy meat that is naturally tender and juicy.
There’s a reason it’s called the tenderloin. This muscle works very little, so the cut offers up the most tender piece of beef. In French butchering, the filet mignon refers only to the very tip of this cut, but in American style, it can mean any steak from the tenderloin. These tender and delicate filet mignon steaks should not be marinated or overly seasoned. The pleasure of this cut is in the exquisite texture and natural flavor.
