Meet your Meat: French vs. American Butchering Styles
Last fall, we hosted a wonderful, private event with our friends at The Meat Hook in Brooklyn, New York, that showcased the art of butchery, “Meet your Meat: French vs. American Butchering Styles.” Ariane served as Master of Ceremonies (and translator!) while Yves-Marie Le Bourdonnec, the Meat “Magician” of Asnieres, France, and Brooklyn’s own “Rock Star” butcher, Tom Mylan demonstrated their knife skills while holding court over massive slabs of beef.
