Despite the many benefits of induction cooking, induction cooking does have some drawbacks.
One big drawback: That the cookware used must be compatible with induction cooking. It must have a flat bottom (a curved bottom puts distance between the electro-magnetic field and decreases its efficiency), and it must be made out of ferromagnetic metal (copper, aluminum, glass and ceramics will not work), such as cast iron or stainless steel.
A great way to tell if your existing pots and pans are compatible with induction cooking is by testing them with a magnet. If there is an electromagnetic pull (i.e. the magnet sticks) then they can be used for induction cooking.
Cooking on an Induction StoveCooking with an induction stove is easy. Simply place your metal cookware onto the induction stovetop, adjust the temperature according to your needs and cook your food like you would on a regular stove. Once your food is done cooking, remove it from the stovetop and the stove will de-energize and turn off automatically.
Since heat is not being transferred from one source to another, the risk of burning your food is greatly decreased making induction cooking a preferred cooking method for professional chefs and amateur cooks alike.
