Jon Vaast is the executive chef of Dressing Room: A Homegrown Restaurant in Westport, CT, owned by celebrated chef and author Michel Nischan. Jon has been associated with the restaurant since its inception four or so years ago, and continues the tradition of offering upscale American fare using seasonal ingredients from local farmers and producers.
