D’Artagnan buffalo are raised on vast pastures in Canada and the U.S. to our exacting specifications on a 100% vegetarian diet, in a clean and natural environment, without the use of chemicals, hormones, antibiotics or steroids. These indigenous animals, technically bison (though we use the more common name buffalo), are raised with minimal human interaction. Our buffalo herds are left alone to graze as they have done from time immemorial.
Buffalo is the original free-range, good-for-you red meat. Leaner than beef, pork, turkey, and even chicken, buffalo meat is not gamey and it never leaves a greasy taste in the mouth. Buffalo offers nutritionally-dense red meat with 25% to 30% more protein than beef, 25% less cholesterol and about half the calories. It is also high in iron content and possesses a sweet flavor. Because it is so lean, it cooks quicker than beef and does not shrink while cooking.
Our buffalo short ribs are perfect for the slow cooker, ideal in soups or stews, and pretty much fool proof. Essentially, these buffalo short ribs are best prepared using low temperatures and cooked for a long time. So there’s no worry about drying out the lean meat when you are braising it in dark beer or wine and a medley of your favorite spices. Brown the short ribs first, then douse them in the liquid of your choice and cook for a few hours. You’ll have fall-off-the-bone, melt-in-the-mouth tender ribs with minimal effort.
