Berkshire hogs are the ultimate heritage breed, dating back 300 years in England, where they have long been recognized for producing pork with extraordinary marbling and rich taste. The hind shank cut is taken from below the knee of a hog, and is not often utilized by the home cook, though chefs are well aware of its charms. When braised slowly on low heat, the intense flavor and soft texture is revealed. The happy side effect is a rich, gelatinous sauce that renders out of the skin, fat and connective tissue as the heat does its work. Since they cook with little attention required, they are ideal for making ahead of a party, or for a satisfying dinner on a cold winter’s night (try using a slow cooker). Just tuck in and enjoy the primal attraction of tender meat falling off the bone.
Our heritage-breed Berkshire hogs are happy hogs raised by a Midwestern cooperative of small, family-run farms without any antibiotics, hormones* or animal by-products ever used. They are raised on pasture, with access to shelter, grain feed and water, and are allowed all their natural rooting and social behavior.
